Wood roasted lamb shanks with garlicky grilled aubergine & yoghurt and fresh herbs

We not only marinate the shanks for 48 hours but also roast them in our wood fired oven using oak logs. It comes with a garlicky grilled aubergine-yoghurt puree and fresh herbs.

To serve

  • Preheat the oven to 220 C.
  • Remove the lamb in the bag from the fridge and keep the bag in a bowl filled with warm water for 20 min.
  • Unwrap and place the lamb into a roasting tray
  • Heat until crispy on the outside.
  • Heat-up the puree in a saucepan and serve with the lamb.
